  1. 6 tablespoons rice wine vinegar

  2. 4 tablespoons vegetable oil

  3. 2 tablespoons sesame oil

  4. 5 tablespoons creamy peanut butter

  5. 3 tablespoons soy sauce

  6. 3 tablespoons honey

  7. 6 green onions , chopped

  8. 1/4 cup cashews , chopped

  9. 8 raw carrots , peeled and shredded

  10. 3 raw beets , peeled and shredded

  11. jalapeno pepper , seeded and diced to taste

  1. Combine first 6 ingredients in bowl and whisk until combined.

  2. Add remaining ingredients and mix well.

  3. Chill in refrigerator for 2 hours and serve.
