  1. 1 (9-inch) graham cracker pie crust

  2. 1/2 cup butter or margarine, softened

  3. 3/4 cup granulated sugar

  4. 1 square baking chocolate, melted, cooled

  5. 1 teaspoon vanilla extract

  6. 2 large fresh eggs

  7. 1 cup heavy cream, whipped

  8. 1/4 teaspoon mint extract

  1. Prepare a graham cracker pie crust. In a bowl cream butter with an electric mixer. Slowly add sugar. Blend in baking chocolate and vanilla. Add eggs, one at a time, beating at medium speed for 3 minutes after each egg addition. Pour into the prepared graham cracker pie crust. Chill. Before serving, garnish with whipped cream flavored with mint extract
