  1. 4 c Cubed cooked potatoes

  2. 1/2 c Chopped green bell pepper

  3. 2 tb Chopped onion

  4. 1/3 c Margarine

  5. Salt and pepper 4 Eggs

  6. 1 c Shredded cheddar cheese;

  7. -shredded (cracker barrel brand)

  8. Recipe by: Kraft - Complete Cheese Cookbook (1971:139) Cook potatoes, green pepper and onion in margarine until lightly browned. Season to taste. Break eggs over potato mixture; cover, cook until eggs are done. Sprinkle with cheese; cover and heat until cheese melts. --
