  1. 1 (8 inch) baked pie shell

  2. 1/2 c. lemon juice (fresh, frozen or bottled)

  3. 1 tsp. grated lemon rind

  4. 1 (15 oz.) can sweetened condensed milk

  5. 2 eggs, separated

  6. 1/4 tsp. cream of tartar

  7. 4 tbsp. sugar

  1. Combine lemon juice and rind. Blend in condensed milk. Beat egg yolks slightly; blend into mixture. Pour into cooled pastry shell. Beat egg whites until foamy; add cream of tartar. Add sugar, 1 tablespoon at a time, beating in well after each.

  2. Continue beating until very stiff peaks form. Pile lightly on pie filling. Brown in moderate 350 degree oven about 10 minutes.
