  1. 4 large sweet potatoes

  2. 2/3 cup(s) packed brown sugar

  3. 2 tablespoon(s) orange juice

  4. 1 teaspoon(s) orange zest

  5. 1/2 teaspoon(s) freshly grated nutmeg

  6. 2 cup(s) shredded, sweetened coconut

  7. 1/2 cup(s) granulated sugar

  8. 1 teaspoon(s) ground cinnamon

  9. 1 large marshmallow per potato ball

  1. Preheat oven to 350 F

  2. Bake potatoes until tender, then peel and mash them.

  3. Stir in the brown sugar, orange juice, zest and nutmeg.

  4. In a separate bowl, toss the coconut with the sugar and cinnamon.

  5. Press the mashed potoes around each marshmallow, creating a 2 to 3-inch diameter ball.

  6. Roll the balls in the coconut mixture.

  7. Bake for 15 to 20 minutes...Watch carefully for the last few minutes of cooking; the expanding marshmallows can cause the potato balls to burst open.
