  1. Carrot Cake

  2. 1 1/2 cups flour

  3. 1 tsp baking soda

  4. 1 tsp baking powder

  5. 1 tsp cinnamon

  6. 1 cup sugar

  7. 3/4 cup oil

  8. 2 eggs

  9. 3 cups raw carrots, grated

  10. 1 cup walnuts, chopped

  11. 350. Grease and flour

  12. 13"x

  13. 9" pan.

  14. In medium bowl, combine flour, baking soda, baking powder, and cinnamon; set aside.

  15. In large bowl, beat sugar and oil until light and fluffy; add eggs

  16. and beat well; stir in flour mixture and mix well; fold in carrots

  17. and walnuts. Pour batter into prepared pans. Bake for 50-60 minutes or until cake springs back when touched

  18. lightly in center; let cool completely.

  19. Frosting

  20. 8 oz. pkg. cream cheese, softened

  21. 2 cups confectioner's sugar

  22. 4 Tbsp. butter, softened

  23. 2 tsp. vanilla

  24. Combine cream cheese, powdered sugar, butter and vanilla; beat

  25. until smooth. Spread over cooled cake.
