  1. 4 Tablespoons (1/4 Cup) butter, softened 1 Can Cream of Chicken or Cream of Mushroom Soup, undiluted 1-1/2 Cups DAISY Dairy Sour Cream 1 teaspoon dried thyme 2 Cups shredded cheddar or Italian Cheese Mix cheese (divided use) 1 (24-ounce) package frozen Potatoes O'Brien hashbrowns (break up any frozen clumps) Smoked Paprika

  1. Heat oven to 350º F. Grease a 8x11-inch shallow glass oven-proof casserole dish. In a large bowl, combine softened butter, chicken soup, sour cream, and thyme and mix well. To the soup mixture, add 1 Cup ounces of the cheddar cheese, frozen hash brown potatoes, onion, and bell pepper. Mix well. Pour into greased casserole dish. Top with remaining shredded cheese. Sprinkle top with smoked paprika Bake for 1 hour, 30 minutes, uncovered. Let rest for 15 minutes before serving. Cut into squares to serve. (Great as is or top each serving with a poached egg)…. Note: You can prepare this ahead of time and refrigerate until ready to bake. The baked dish may be frozen. Let thaw before reheating.
