    1. 1 cn (32 oz) refried beans

    2. 1 ts Tabasco pepper sauce

    3. 1 Dozen eggs

    4. Butter or margarine 1/2 lb Shredded Monterey Jack

    5. -Cheese 1 pk Corn tortillas

    6. 10 sprigs -Cilantro, minced

    7. 2 Ripe tomatoes,chopped

    8. 1 Jalapeno pepper, thinly

    9. -Sliced 2 tb Chopped onion

    10. 1/2 Avocado, finely diced

    Instructions Jump to Ingredients ↑

    1. Combine all ingredients for salsa;set aside.Heat refried beans in a saucepan with Tabasco sauce;keep warm. Fry eggs in butter or margarine to desired doneness.Lay 2 tortillas on each plate.Place one fried egg on each tortilla.Top with refried beans,cheese and salsa.Serve immediately.Serves 6.
