  2. NORTH MEXICAN GUACAMOLE

  7. 2 lg Ripe Haas avocados

  8. 1 cl Garlic, smashed but whole

  9. 1/4 Lime

  10. 2 tb Lime juice, additional

  11. 1/2 c Cilantro, firmly packed w/

  12. -stems

  13. 1 t Fresh jalepeno, minced

  14. 1 tb Onion, minced

  15. 1/2 c Tomatillos, coarsely chpd

  16. Salt and pepper

  17. --TOMATILLO SAUCE--

  18. 1 lb Tomatillo

  19. 1/2 lb Red tomatoes, to

  20. 1 lb

  21. 2 Jalepenos, seeded, pith,

  22. -ribs removed

  23. 1/2 ts Cumin, guessed

  24. Cilantro, garnish

  25. This cannot be made any earlier than 1 hr before

  26. serving. Halve avocado and leave in shell. Score

  27. horizontally and vertically, leaving in shell. Use the

  28. lime and rub surface of avocado then rub surface with

  29. the garlic. Using fingers, push pulp into a bowl. In

  30. sm processor, combine 2T lime juice, cilantro with

  31. stems, jalepenos, and onion. Puree. Add to avocado

  32. chunks; toss gently with spatula. Mix in tomatillos;

  33. season at the last minute with salt and pepper.

  34. Tomatillo Sauce: Puree all. To serve, place guacamole

  35. in center of sm plate and spoon sauce around it.

  36. Tomato should be just enough to give it a suggestion
