  6. 1 1/2 c Cooked peas or garbanzo bean

  7. 1/2 c Dry pasta

  8. 1 c Fresh chopped tomatoes

  9. 3 tb Olive oil

  10. Parmesan cheese

  11. 1 c Chopped onion

  12. 4 -5 cloves garlic, crushed

  13. 1 c Minced celery

  14. 1 c Cubed carrots

  15. 1 c Cubed eggplant or zucchini

  16. 1 c Chopped green pepper

  17. 2 ts Salt

  18. 1/4 ts Black pepper

  19. 1 t Oregano

  20. 1/2 c Fresh chopped parsley

  21. 1 t Basil

  22. 2 c Tomato puree

  23. 3 1/2 c Water or beef stock

  24. 3 tb Dry red wine

  25. In a soup kettle, saute garlic and onions in olive oil

  26. until they are soft and translucent. Add 1 tsp salt,

  27. carrot, celery and eggplant/ zucchini. If you use

  28. zucchini, add it with the green pepper. Mix well. Add

  29. oregano, black pepper, stock, puree, cooked beans and wine. Cover and simmer 15 minutes. Add tomatoes and remaining salt. Keep at the lowest heat until 10

  30. minutes before you plan to serve. Then, heat the soup

  31. to a boil, add the pasta, and boil gently until the

  32. pasta is tender. Serve immediately, topped with

  33. parsley and parmesan.
