  6. 1 c Onions -- grated

  7. 1 Garlic clove -- minced

  8. 1 Shallot bulb -- minced

  9. 3 lg Scallions -- minced

  10. 1 lg Bell pepper -- chopped

  11. 1 oz Olive or other salad oil

  12. 2 qt -- water

  13. 1 lb Kidney, pink or pinto beans

  14. -washed, sorted and soaked

  15. 1 lg Bay leaf -- crushed

  16. 1 t Miso paste

  17. 1 t Mild or hot curry

  18. 1 t Basil

  19. 1 tb Paprika

  20. Chili powder to taste

  21. Salt and pepper to taste

  22. 3 lg Tomatoes -- chopped, OR 1 cn (15 oz) peeled tomatoes

  23. 1 cn (15 oz) tomato sauce

  24. In a large saucepan, saute onions, garlic, shallot,

  25. scallions, and green pepper in oil. Add water, beans,

  26. and seasonings. Simmer for 1 1/2 hours.

  27. Add tomatoes and tomato sauce. Simmer for 1 hour more

  28. or until fork-tender. For spicier chili, use 2 or more

  29. cloves of garlic. Serve piping hot.
