  1. 2 cups plus 1 tablespoon cold milk, divided

  2. 1 package (3.9 ounces) instant chocolate pudding mix

  3. 4 ounces cream cheese, softened

  4. 1 tablespoon sugar

  5. 1/4 teaspoon peppermint extract

  6. 1 cup whipped topping

  7. 4 to 6 mint Andes candies, optional

  1. In a large bowl, whisk 2 cups milk and pudding mix for 2 minutes; set aside. In a small bowl, beat the cream cheese, sugar, extract and remaining milk. Fold in whipped topping. In parfait or dessert glasses, layer the pudding and cream cheese mixtures. Garnish with mint candies if desired. Yield: 4-6 servings.
