  1. ROAST PORK AND BLACK BEAN CHILI

  2. 1/4 cup bacon drippings

  3. 2 cloves garlic, minced

  4. 3 tbs chili powder

  5. 1/8 tsp cumin

  6. 4 LB pork loin with bone in

  7. 1 lb. dry black beans

  8. 2 tbs olive oil

  9. 1/2 cup diced salt pork

  10. 2 onions, chopped

  11. 3 cloves garlic, minced

  12. 1 jalapeno pepper, minced

  13. 6 0z package cooked ham, diced

  14. 2 can beef broth

  15. 1 bay leaf

  16. 1 tsp oregano

  17. 1 tsp red wine vinegar

  18. 2 tbs rum flavoring

  19. 4 cans mild green chilies, chopped

  20. 1 large can hot chili beans with gravy

  21. In a Dutch oven, heat olive oil and add onions, garlic, jalapenos,

  22. and carrots. Saute for 10 minutes. Stir in oregano and pork cubes.

  23. Cook for 20 minutes, stirring occasionally.

  24. Stir in chicken stock, 1 tsp salt, tomatoes, and potatoes. Bring

  25. to boil, then lower and simmer 1 1/2 hours. Stir occasionally.

  26. Add green chilies and beans to mixture and simmer another 30-45

  27. minutes. Serve.
