  1. Southwestern-style Beef Chili

  2. 3 lb. beef chuck, cut into 1/2 inch chunks

  3. 2 or 3 lg. onions, finely chopped

  4. 1 jalapeno chile, seeded and finely chopped

  5. 8 garlic cloves, minced

  6. 4 t. ground oregano

  7. 3 T. ground cumin

  8. 2 t. ground coriander

  9. 1 t. ground cinnamon

  10. 1/2 c. chili powder

  11. 1 can (12 oz.) beer

  12. 2 1/2 c. beef stock

  13. 1 can (28 oz.) crushed tomatoes

  14. 1 canned chipotle in adobo, chopped

  15. 1 red bell pepper, seeded and diced

  16. 1 yellow bell pepper, seeded and diced

  17. 1 can (15 oz.) kidney beans

  18. 1 can (16 oz.) pinto beans

  19. 1/2 square unsweetened chocolate, grated salt and freshly ground pepper (to taste)

  20. Brown all sides of beef in pan of a little veg. oil. Put beef into cp set to high. Then saute onion in a little veg. oil. When onion

  21. is lightly browned, add jalapeno, garlic and all spices. Saute

  22. mixture, stirring constantly for 2 minutes. Add bell peppers to

  23. saute mixture, and keep stirring for a couple more minutes, then

  24. add mixture to cp. Add the rest of the ingredients to cp, and bring

  25. to high heat stirring ocassionally. Then reduce heat to let simmer.

  26. Ready to serve after a few hours.
