  7. 1 pk Yeast

  8. 3/4 c Sugar

  9. 1/4 c Water, lukewarm

  10. 1 t Salt

  11. 2 c Milk

  12. 5 c Flour (approx)

  13. 1/4 lb Butter or margarine

  14. 2 ea Eggs, large

  15. --PRUNE FILLING--

  16. 1 lb Prunes

  17. 1 x Cinnamon or 1 x Sugar

  18. 1 t Chopped orange peel

  19. --POPPY SEED FILLING--

  20. 2 c Poppy seeds, Ground

  21. 1/2 c Sugar

  22. 1/2 c Milk

  23. 1 t Butter

  24. 1/2 c Corn syrup

  25. 1 x Cinnamon

  26. --APPLE FILLING--

  27. 4 ea Apples, sliced

  28. 3 T Cinnamon candies

  29. 1/3 c Water

  30. Dissolve yeast in lukewarm water. Scald milk and set aside until

  31. lukewarm, not cold. Cream butter and sugar until light and fluffy. Add

  32. salt and mix again. Place dissolved yeast in milk. Add 3 cups flour and beat well. Stir in the creamed mixture and beat again. Then add unbeaten

  33. eggs and blend. Gradually add remaining flour, a tablespoon at a time,

  34. until dough is smooth enough to handle, then knead in remaining flour on a

  35. warmed board. The dough should be smooth and elastic to the touch, never

  36. hard nor stiff. Place in a greased bowl, cover, and allow to stand in a

  37. warm place about 2 1/2 hours until double in bulk.

  38. Place dough on a warmed board, which has been slightly floured. Pat

  39. 1/4 inch thickness. Cut into 2 inch squares. Place a

  40. teaspoon of filling (recipe below) on each square and gather up the 4

  41. corners carefully, folding one on top of the other, and press together so

  42. that folded dough is thinner than dough beneath the filling. When folded

  43. correctly, the filling will peek through the four sides. Place on a large

  44. cookie sheet about 2 inches apart. Let rise until double in bulk in a warm

  45. 45 minutes. Bake at 375-F for 25 minutes. When cool sprinkle

  46. generously with powered sugar. Makes about six dozen cakes.

  47. PRUNE FILLING:

  48. Wash prunes and cook in enough water to cover. Bring to boil.

  49. When cool, strain, pit and chop well. Sweeten and add cinnamon to taste or orange peel. Allow to cool slightly before spreading.

  50. POPPY SEED FILLING:

  51. Combine ingredients and cook about five minutes until thick.

  52. APPLE FILLING:

  53. Cook together about five or six minutes until apples are soft. Cool. - - - - - - - - - - - - - - - - - -
