  1. 2 cups canned chickpeas, rinsed and drained

  2. 1 1/2 teaspoons extra-virgin olive oil

  3. 1/2 teaspoon ground cumin

  4. 1/2 teaspoon ground coriander

  5. 1/4 teaspoon ground red pepper

  6. 1/4 teaspoon ground black pepper

  1. Preheat the oven to 400 degrees. Coat a no-stick baking sheet with no-stick spray and set aside.

  2. In a small bowl, toss the chickpeas with the oil, cumin, coriander, red pepper and black pepper.

  3. Place the chickpeas in a single layer on the prepared baking sheet. Bake for 30 to 40 minutes, or until crisp and golden.
