  1. 1 tablespoon 15ml Olive oil

  2. 1/2 cup 31g / 1.1oz Chopped onion

  3. 1/2 cup 118ml Grated zucchini

  4. 1 cup 110g / 3.9oz Sliced steamed carrots

  5. 1 cup 146g / 5.1oz Steamed broccoli flowerettes

  6. 3/4 cup 177ml Uncooked oatmeal

  7. 1 Whole wheat bread Crumbled

  8. 3 tablespoons 45ml Oat bran

  9. 3 oz 85g Shredded cheddar cheese

  10. 1/2 cup 118ml Tomato sauce

  11. 1 Egg

  12. 1 Egg white

  13. 1/4 teaspoon 1 1/3ml Salt - pepper and sage

  14. 1/2 teaspoon 2 1/2ml Dried thyme

  15. 1/4 cup 36g / 1 1/3oz Chopped parsley

  16. 6 tablespoons 90ml Grated parmesan cheese

  1. Recipe Instructions 1. Preheat oven to 375F.

  2. In small skillet heat olive oil and saute onion until translucent, about 5 minutes.

  3. In large bowl combine zucchini, carrot, broccoli, oatmeal, breadcrumbs, oat bran and cheese.

  4. In small bowl beat together tomato sauce, egg and egg white, seasonings and Parmesan.

  5. Combine all ingredients and stir thoroughly to mix.

  6. Turn mixture into 9x5-inch loaf pan coated with non-stick spray.

  7. Bake 30 to 35 minutes, or until firm. Let stand 15 minutes before slicing. Why the sudden interest in oat bran? Oat bran is the fibrous outer layer of the oat grain, which is generally removed when the grain is processed into oatmeal. Now that we know the importance of fiber in a well balanced diet, it is a good practice to put some of that oat bran back into our food.
