  1. 5 Bacon strips

  2. 3/4 cup 46g / 1.6oz Onion - chopped

  3. 2 tablespoons 30ml All-purpose flour

  4. 2/3 cup 157ml Cider vinegar

  5. 1 1/3 cups 315ml Water

  6. 1/4 cup 49g / 1.7oz Sugar

  7. 1 teaspoon 5ml Salt

  8. 1/8 teaspoon 0.6ml Pepper

  9. 6 cups 1422ml Sliced cooked peeled - potatoes

  1. In a large skillet, fry bacon until crisp; remove and set aside.

  2. Drain all but 2-3 tablespoons of drippings; cook onion until tender.

  3. Stir in flour; blend well. Add vinegar and water; cook and stir until bubbly and slightly thick. Add sugar and stir until it dissolves.

  4. Crumble bacon; gently stir in bacon and potatoes. Heat through, stirring lightly to coat potato slices. Serve warm.
