  2. GARLIC-ROSEMARY OIL

  6. 3 lg Plump garlic cloves

  7. 1/2 c Extra-virgin olive oil

  8. 1 4 sprig fresh rosemary

  9. -OR 1 t Dried rosemary

  10. 1/2 ts Salt, or to taste

  11. To make the garlic-rosemary oil, peel and cut the

  12. garlic into very thin slices. Pour the oil into a

  13. small heavy skillet or saucepan, add the sliced garlic

  14. and the rosemary, crushing the herb between your

  15. fingers as you add it, and warm over low heat. When

  16. the aroma rises and the garlic just starts to take on

  17. color (it should not brown), about 5-7 minutes, remove

  18. from the heat. Add the salt to taste and strain the

  19. oil into a small pitcher.

  20. NOTE: The oil can be made up to 2 weeks ahead, cooled

  21. to room temperature, and stored in the refrigerator in

  22. a tightly sealed container. To enjoy the full flavor and fragrance of the oil, make sure to bring it to

  23. room temperature before using.
