  1. 4 large artichokes -- (about 3 lbs.)

  2. 4 cups fresh bread crumbs*

  3. 3/4 cup wish-bone italian dressing

  4. 1/2 cup chopped onion

  5. 2 tablespoons grated parmesan cheese

  6. 2 tablespoons chopped parsley

  7. 2 cups chicken broth

  1. Preparation : Prepare artichokes for cooking as directed; set aside. In medium bowl, combine bread crumbs, Italian dressing, 1/4 cup onion, cheese and parsley. Stuff bread crumb mixture between artichoke leaves. In large nonaluminum saucepan, bring broth and remaining 1/4 cup onion to a boil. Add artichokes and simmer covered, basting occasionally, 40 minutes or until leaves are tender and pull out easily. Makes 4 servings. *For best flavor and texture, make the fresh bread crumbs using Italian or French bread. Also terrific with Wish-Bone Robusto Italian or Lite Italian Dressing. HOW TO PREPARE ARTICHOKES FOR COOKING: 1. Wash artichokes in cold water; drain.

  2. With a large knife, cut stem close to base. Cut off 1 inch of top.

  3. Remove tough lower leaves or discolored leaves.

  4. If desired, with scissors, cut off sharp leaf tips. Brush cut edges with lemon juice.
