  7. 1/2 lb Chicken gizzards -- ground

  8. 1/4 lb Pork -- ground

  9. 1 Bay leaves

  10. 1 Onions -- minced

  11. 1 1/2 Celery -- minced

  12. 1/2 Bell peppers, green -- minced

  13. 1 Garlic cloves -- minced

  14. 1 t Tabasco sauce

  15. 1 t Salt

  16. 1 t Pepper, black

  17. 2 ts Paprika

  18. 1 t Dry mustard

  19. 1 t Cumin

  20. 1/2 ts Thyme

  21. 1/2 ts Oregano

  22. 2 tb Butter

  23. 2 c Stock, pork

  24. 1/2 lb Chicken livers -- ground

  25. 1 c Rice -- uncooked

  26. Place fat, gizzards, pork and bay leaves in large

  27. heavy skillet over high heat; cook until meat is

  28. thoroughly browned, about 6 minutes, stirring

  29. occasionally. Stir in the onion, celery, bell pepper,

  30. garlic, Tabasco, salt, pepper, paprika, mustard,

  31. cumin, thyme, and oregano; stir thoroughly, scraping

  32. pan bottom well. Add the butter and stir until melted.

  33. Reduce heat to medium and cook about 8 minutes,

  34. stirring constantly and scraping pan botton well. Add

  35. the stock and stir until any mixture sticking to the

  36. pan bottom comes loose; cook about 8 minutes over high

  37. heat, stirring once. Then stir in the livers and cook

  38. about 2 minutes. Add the rice and stir thoroughly;

  39. cover pan and turn heat to very low; cook about 5

  40. minutes. Remove from heat and leave covered until rice
