  3. 1/2 cup 8g / 1/3oz Chopped cilantro

  4. 1/2 cup 73g / 2.6oz Chopped fresh parsley

  5. 1/2 cup 118ml Olive oil

  6. 1/2 cup 118ml Red wine vinegar

  7. Salt - to taste

  8. Freshly-ground black pepper - to taste

  1. Combine all of the ingredients and season to taste with salt and pepper; serve at room temperature.

  2. Great over roasted or grilled poultry as well as baked or grilled fish and grilled meaty vegetables such as eggplant or mushrooms.
