  2. Title: Wild Rice & Artichoke Salad

  5. 3/4 c Wild rice

  6. 3/4 c Brown rice

  7. 3 c ;water

  8. 1 tb Oil

  9. 6 oz Jar marinated artichoke

  10. -hearts; drained, halved

  11. 1 Red pepper (sweet); cored

  12. -and cut into 1/2-inch -pieces

  13. 1 md Carrot; very thinly sliced

  14. MMMMM--DRESSING--

  15. 2/3 c Olive oil

  16. 3 tb Red wine vinegar

  17. 1 ts Dijon-style mustard

  18. 1 Garlic clove; minced

  19. 1/2 ts Poultry seasoning

  20. 1 ts Thyme

  21. 1/4 ts Basil

  22. 1/4 ts Oregano

  23. 1/2 ts Salt

  24. Pepper to taste

  25. 1 sm Head leaf lettuce; washed,

  26. -dried, and torn into bite-

  27. -size pieces

  28. Rinse the wild rice in a strainer under cold running water. Put in a

  29. medium size-bowl and pour on boiling water to cover. Let soak for 30

  30. minutes, then drain thoroughly.

  31. Rinse the brown rice in a strainer and put in a medium-size saucepan

  32. along with the drained wild rice, 3 cups of water, oil and salt.

  33. Cover and bring to a boil. Reduce the heat to a simmer andcook until

  34. all of theliquid is absorbed, about 45 minutes. Do not stir rice at

  35. any time. When done, put in a large bowl and chill until very cold,

  36. about 2 hours.

  37. When the rice is cold add the artichoke, pepper, scallions adn

  38. carrot, and toss well.

  39. To make the marinade combine all of the dressing ingredients in a

  40. jar with a tight-fitting lid and shake vigorously. Pour over the

  41. salad andtoss well.

  42. 2 hours or up to

  43. 24 hours. To serve, arrange equal portions

  44. of letuce on 4 large plates and mound on the rice salad.
