  1. 1/3c Parmesan cheese, grated

  2. 3 x Chicken breast

  3. 1 tb Margarine

  4. 1/2c Milk, skim

  5. 1 tb Pimiento, chopped

  6. 1/4ts Italian seasoning, crushed

  7. 1/4c Green onion; sliced

  8. 1 tb Flour, all-purpose

  9. 5 oz Spinach, frozen **

  1. + chicken breast, (about 2 1/4 pounds total), skinned, boned, and halved ** 1/2 of a 10-ounce package frozen chopped spinach, thawed and drained In a small mixing bowl combine cheese and Italain seasoning.

  2. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside.

  3. ARRANGE pieces in an 8x8x2-inch baking dish.

  4. In a small saucepan cook onion in hot margarine till tender.

  5. Stir in flour; add milk all at once.

  6. Cook and stir till bubbly; stir in drained spinach and pimiento.

  7. Spoon spinach mixture over chicken; sprinkle with remaining cheese mixture.

  8. Bake, uncovered, in a 350F oven for 30 to 35 minutes or till tender.
