  2. LIGHT FRUIT CAKE

  6. 1/2 lb Glace pineapple

  7. 2 lb Sultanas

  8. 1 lb Glace cherries (red & green)

  9. 1 lb Almonds

  10. 5 c Flour

  11. 1 t Baking powder

  12. 1 lb Butter

  13. 2 c Sugar (1 lb)

  14. 1/2 ts Nutmeg

  15. 10 Eggs

  16. 1 Lemon, juice & rind

  17. 1 Orange,juice & rind

  18. 1 t Rose ext

  19. 1 t Almond ext

  20. 1. Clean sultanas, slice pineapple thinly, halve cherries. 2. Mix and sift

  21. flour, baking powder and spice and add half to prepared

  22. 3. In a large bowl, cream butter and gradually beat in sugar.

  23. Add well beaten eggs and beat well. 5. Fold other half of flour mixture

  24. into creamed mixture alternately with

  25. juices and beat well. 6. Add fruit to to creamed mixture. Combine

  26. mixture til thoroughly

  27. blended. Split almonds and add to mixture, saving some whole for top.

  28. Add flavourings. 7. Pour mixture into cake pans which have been lined

  29. with 3 thicknesses

  30. 8. Bake cake at

  31. F. for approximately 3 hours or til firm and until

  32. cake mixture is firm when pressed. 9. Cool on cake rack until

  33. thoroughly cold. Wrap in foil and store in

  34. 2 large or 1 large and 2 loaf tins. - - - - - - - - - - - - - - - - - -
