  5. 4 oz Bacon ; cut small pieces

  6. 1 c Onion ; minced

  7. 2 ts Parsley ; fresh flat leaf

  8. - finely chopped 1/2 Bay leaf

  9. 2 c Celery ; minced

  10. 1 c Green pepper ; minced

  11. 3 c Minced clams ;

  12. 16 oz cans

  13. 16 oz Clam juice ; bottled

  14. 28 oz Italian-style tomatoes

  15. - drain (saving liquid)

  16. - and chop 4 c Potatoes ; peel/dice

  17. 2 ts Butter

  18. 8 c -water

  19. 1/2 ts Black pepper ; freshly groun

  20. -salt to taste

  21. -parsley, fresh ; chopped

  22. - for garnish

  23. In a heavy pot cook bacon with onion, parsley, and black pepper for about 5

  24. minutes. Add the 1/2 bay leaf, minced celery, and minced green pepper;

  25. 15 minutes. Add juice from minced clams,

  26. 1 eight-ounce bottle of

  27. clam juice, reserved liquid from tomatoes, diced potatoes and water; simmer

  28. for 25 minutes longer. Add the clams, tomatoes and second eight-ounce

  29. bottle of clam juice; correct seasoning.

  30. Add butter; sprinkle top with parsley. Serve with crusty garlic bread or oyster crackers. --
