  1. 2 c Diced mango (avoid fibrous -parts)

  2. 1/4 c Chinese preserved black -beans, rinsed

  3. 1/4 c Green onions, thinly sliced -on the bias

  4. 1/4 c Diced red onions

  5. 2 tb Grated ginger

  6. 2 Red jalapeno peppers, -sliced in thin circles

  7. 1 sm Sweet red pepper, diced --

  8. 1/2 CUP MIXED, CHOPPED FRESH-- Oregano Zest and juice of one lime Zest and juice of one orange

  9. 1/4 c Rice wine vinegar

  10. 1 c Light olive oil

  11. 1 tb Toasted cumin seed
