  1. 4 x 150 g/5 02 slices raw salmon, skinned

  2. 2 tablespoons whipped cream

  3. 150 g/5 02 mayonnaise

  4. Lemon juice

  5. Salt

  6. Cayenne pepper

  7. Serves 4

  1. Method :

  2. Poach the salmon and set aside to cool.

  3. Fold the whipped cream into the mayonnaise and season to taste with lemon juice, salt and cayenne pepper.

  4. Serve the salmon and sauce with some warm toast and a freshly prepared mushroom salad or boiled new potatoes.
