  2. 1 large tomato

  3. 6 1/2 ounces canned solid white tuna in water -- drained

  4. 2 tablespoons green onion -- finely chopped

  5. 2 tablespoons lowfat mayonnaise

  6. 1/4 teaspoon tarragon -- crushed

  7. 1/8 teaspoon salt

  8. 1/8 teaspoon fresh ground black pepper

  9. 6 French bread slice -- or Italian bread

  10. slices, cut 1/2-inch thick

  1. Use tomato held at room temperature until fully ripe. Remove core and cut into 1/2-inch cubes (makes about 1 cup). In a medium bowl combine tuna, green onion, mayonnaise, tarragon, salt, black pepper, and tomato; mix well. Spread on bread slices .
