  1. Roasted Pepper Salad

  2. Makes 8 servings

  3. 3 large green peppers

  4. 3 large red peppers

  5. 1/2 cup olive oil

  6. 1/4 cup red wine vinegar

  7. 2 Tbsp dry sherry

  8. 1 clove garlic, minced

  9. salt & freshly ground pepper to taste

  10. Broil peppers, turning frequently until completely charred or 8 to 10 minutes for steam to loosen skins (or place in brown paper bag). Cut in 3/8"

  11. lengthwise strips.

  12. In serving dish mix oil, vinegar, sherry, garlic, salt and pepper.

  13. Add peppers. Toss thoroughly to coat. Cover and let marinate 1

  14. to 2 hours before serving.
