  1. 30g/1 1/4 ounces butter

  2. 2 cinnamon sticks

  3. 1 tablespoon brown sugar

  4. 1 tablespoon of pecans or walnuts chopped

  5. 1 orange peeled and segmented, remove skins from segments

  6. 1 tablespoon of white wine

  7. 2 cooking apple, cored and diced

  1. Instructions Heat the butter in a frying pan until foaming. Add the cinnamon, sugar and apples and stir. Add the nuts, orange and wine and simmer for 2-3 minutes. Put this mixture in a pan of boiling water on the hob and boil until soft. For the topping, mix all the topping ingredients together until firm and place on a baking tray. Cook topping mixture in the oven for 10-15 minutes until golden brown. Once the apple is cooked, put this in a small oven proof plastic ramekin and put the crumble on top. Decorate the top of the crumble with the mint sprig and dust with a little icing sugar and serve.
