  1. 12 oz 340g Frozen shelled sweet soybeans (edamame)

  2. 2 Bags baby lettuce mix - (4 oz ea)

  3. 1 Fuji apple - peeled, cored,

  4. 1/4 cup 40g / 1.4oz Golden raisins

  5. 3 tablespoons 45ml Soy sauce

  6. 2 tablespoons 30ml Fresh lime or lemon juice -

  7. 1 tablespoon 15ml Vegetable oil

  1. Cook soybeans in boiling water according to package directions. Drain and cool. In large bowl, combine lettuce, apple slices and golden raisins.

  2. In small bowl, mix together soy sauce, lime or lemon juice and oil. Drizzle over salad, and serve.

  3. This recipe yields 4 to 6 servings.
