  5. 1 c Brown lentils

  6. 1 lb Fresh spinach

  7. 1 Onion, chopped

  8. 1/4 c Olive oil

  9. 1 t Tomato paste

  10. 1 Bay leaf

  11. 4 c Water

  12. 2 Garlic cloves, crushed

  13. 1 t Cumin

  14. 1 t Coriander

  15. 1 t Thyme

  16. 1/4 c Chopped parsley

  17. 3 T Lemon juice

  18. Salt

  19. Pepper

  20. Wash lentils and cook in water until almost tender. Carefully wash, drain,

  21. stem and chop spinach. Heat oilve oil and saute onion, garlic and spinach

  22. until wilted. Add to lentil broth, rinsing saute pan with a little broth to

  23. save oil and garlic remaining in pan. Add to soup pot with tomato paste,

  24. lemon, parsley and the remaining ingredients. Simmer for 20 minutes. Check

  25. seasonings. Serve hot with additional lemon. --
