  2. White Chocolate Cheesecake with Raspberry Sauce

  7. CRUST

  8. 1 c bread crumbs

  9. 1/4 c chopped almonds

  10. 1/4 c butter

  11. 1/2 tsp cinnamon

  12. 1/4 c sugar

  13. CAKE

  14. 6 oz White chocolate chips

  15. 1 lb Cream cheese

  16. 3/4 c Sugar

  17. 3 Eggs

  18. 1 1/2 ts Vanilla extract

  19. 3/4 c Sour cream

  20. 2 tb Unsweetened cocoa

  21. RASPBERRY

  22. SAUCE

  23. 2 1/2 c Raspberries

  24. Sugar -- to taste

  25. 1 tbsp Grand Marnier

  26. Place chocolate in a double boiler and heat over hot water until it melts.

  27. Stir to blend and let cool to room temperature.

  28. Microwave almonds and butter for crust for 1 minute. Stir dry crust

  29. ingredients together in 9 springform pan. Add butter and nuts and pat firmly

  30. onto bottom. Grease sides of pan.

  31. With an electric mixer, blend cheese and sugar until smooth. Mix in eggs,

  32. vanilla, and sour cream. Stir in melted chocolate. NOTE: it is important

  33. to have the cheesecake ingredients and the melted chocolate close to the

  34. same temperature when they are combined so that they blend together

  35. smoothly. Pour into pan. Put another pan with water into the preheated oven. This will prevent the top of the cheesecake from cracking. Bake in the middle

  36. 325F oven for 45 minutes or until just barely set. Turn off the

  37. oven, leave the door ajar, and let cool in oven for 1 hour longer. Chill. Just

  38. before serving, dust cocoa through a sieve making a ring around the cheesecake.

  39. Prepare raspberry sauce: Reserve 1/2 cup raspberries for garnish. In a

  40. blender, puree the remaining berries and push through a sieve. Stir in

  41. sugar to taste and the Grand Marnier. To serve, spoon raspberry sauce on to

  42. desert plates. Remove pan sides of cheesecake and cut into wedges. Place on

  43. raspberry sauce and garnish with berries. - - - - - - - - - - - - - - - - - -
