  1. 1 1/2 c Cubed chicken breast

  2. 1/2 c Chinese straw mushroom

  4. 5 c water

  5. 1 ea Stalk of lemon grass-cut in

  6. 1 pn Dry galanga

  7. 1 ea Green onion-cut into 1" pcs

  8. 1 ea Small fresh tomato cut up

  9. 2 ea To-

  10. 3 coriander leaves cut u

  11. 1 ea Fresh green chili pepper-sl

  12. 2 t Fresh lemon juice

  13. 1 x Fish sauce or to taste

  14. 1/4 t Ground red cayenne pepper

  15. 7 ea To-

  16. 8 fresh mint leaves

  1. Directions: In a med sauce pan, cook chicken in boiling water for 10 minutes.

  2. Add lemon grass and galanga and cook 7-8 minutes longer.

  3. Add remaining ingredients EXCEPT for the mint leaves and lemon juice, and simmer on low heat about 15- 20 minutes.

  4. Remove from heat.

  5. Stir in lemon juice.

  6. Sprinkle with mints.

  7. Serve hot with rice.
