  7. 6 tablespoons oil

  8. 1 onion -- cut into strips

  9. 2 green pepppers -- cut into strips

  10. 5 large mushrooms -- sliced

  11. 1 celery stalk -- sliced diagonally

  12. 6 tomatoes -- peeled and diced

  13. 5 garlic cloves -- minced

  14. salt -- to taste

  15. 1 tablespoon fines herbs

  16. 1 large eggplant

  17. 2 eggs -- beaten with

  18. 1 tablespoon water -- and 1 pinch salt

  19. 1/2 cup freshly grated parmesan cheese

  20. 1 cup grated swiss cheese

  21. Heat 3 tbls. oil in a large skillet and add onion, green pepper, mushrooms,

  22. celery and garlic. Saute until tender. Add tomatoes. Bring to a boil. Add

  23. salt and fines herbs. Turn heat to low and simmer sauce for 30 minutes.

  24. Peel eggplant and slice into large slices. Dip in egg mixture and fry

  25. eggplant in a skillet with remaining oil until tender. Arrange eggplant

  26. slices in a large baking dish. Sprinkle with Parmesan cheese. Pour tomato

  27. sauce over the top and spirinkle with Swiss cheese. Heat in 350F. oven

  28. until cheese is melted. Serves 4.
