  1. 1 Unflavored gelatin

  2. 3/4 cup 177ml Cold water

  3. 1 Campbells consomme

  4. 1 Red beets - diced

  5. 8 oz.

  6. 1 tablespoon 15ml Lemon juice

  7. 2 tablespoons 30ml Thinly sliced green onion

  8. 1 cup 237ml Sour cream

  1. In saucepan, sprinkle gelatin on cold water to soften. Place over low heat, stirring until gelatin is dissolved. Remove from heat; stir in consomme, liquid from beets and lemon juice. Chill until slightly thickened. Fold in beets and 1 tablespoon onion.

  2. Pour into 4 cup ring mold; chill until firm. Unmold on lettuce. Fill center of mold with sour cream, garnish with remaining onion.
