  1. 3 pieces of fresh Sea Scallops

  2. 1 tbsp. canola oil salt freshly ground pepper to taste

  1. Ensure scallops are clean. Season both sides well. Pour Canola oil into frying pan.

  2. Heat oil until it ripples when you move the pan. Then place scallops in the pan top side presentation side down.

  3. When the scallops start to get a little golden brown color, place them in the oven for 2-3 minutes. Remove and place on a piece of kitchen towel to take off the excess oil. Serve over risotto.<
