  1. 1 Chicken - (3 1/2 lbs) - cut into pieces, Skin removed

  2. 1 tablespoon 15ml Oil

  3. 2 tablespoons 30ml Flour

  4. 1 cup 237ml Low-sodium chicken broth - boiling

  5. 1 cup 237ml Evaporated fat-free milk - scalded

  6. 1/2 teaspoon 2 1/2ml Salt -

  7. 1/4 teaspoon 1 1/3ml Freshly-ground white pepper

  8. 1 Shucked oysters

  1. Recipe Instructions Preheat oven to 350 degrees. Heat broiler. Spray broiler tray. Place chicken on tray and broil until browned on all sides (5 to 6 minutes). Place in casserole with lid. Heat oil in saucepan over medium heat. Add flour and cook, stirring, 2 to 3 minutes. Remove from heat and pour on boiling broth, beating vigorously to prevent lumping. Return to heat and cook until thickened. Add scalded evaporated milk, salt, and pepper. Beat until smooth. Pour over chicken. Cover and bake for 35 minutes.
