  1. 5 lbs. fresh sliced carrots

  2. 1-1/2 cups chopped onion

  3. 1-1/2 cups sliced celery

  4. 10 quarts stock or water

  5. 1/4 cup lemon juice

  6. 1 tbsp. salt

  7. 1/2 tbsp. pepper

  8. 2 tbsp. curry powder

  9. 1/3 cup chopped fresh mint (1 tbsp. dried) Optional: Chopped peanuts for garnish

  1. Combine carrot, onion, celery, curry powder, and stock in a stainless steel or other non-reactive pot. Simmer 1 hour. Puree Soup. If soup is too thick, thin with a little stock or water. If soup is too thin, reduce over medium heat to desired thickness. Add mint and season with lemon juice. Season to taste with salt and pepper to taste. Garnish each serving with 1 tsp. chopped peanuts if you like. Makes 8 quarts.
