  1. 2 dozen pierogi of choice, sauteed in butter

  2. 2 cups sour cream

  3. 6 large eggs

  4. 1/4 cup melted butter

  5. 1 teaspoon cornstarch

  6. 1/4 teaspoon salt

  7. 2 tablespoons sugar only if using sweet pierogi

  8. 1 teaspoon vanilla only if using sweet pierogi

  1. Preheat oven to 350 degrees. Lightly grease a 9-by-13-inch pan. Place fried pierogi in a single layer in the prepared pan.

  2. In the bowl of a food processor, combine sour cream and eggs until thick and fluffy. Add melted butter, cornstarch, salt and, if using sweet pierogi, add the sugar and vanilla. Process until completely mixed.

  3. Pour over pierogi and bake 45-60 minuts or until puffed and golden brown. Serve hot with sour cream and chives for savory pierogi or sour cream and fruit filling for sweet pierogi, if desired.
