  5. 1 c Dried navy beans

  6. 1 tb Olive oil

  7. 3/4 c Diced onion

  8. 1/4 c Diced carrot

  9. 1/4 c Diced celery

  10. 5 c Chicken broth

  11. 1/2 ts Thyme

  12. Salt and pepper; as desired

  13. 3 tb Lemon juice

  14. COVER THE BEANS with cold water and soak overnight. The next day,

  15. drain and discard water. Place oil in a 2-quart pot over medium heat

  16. and add the onions, carrots and celery. Cook for 5 minutes. Add the
