  1. 4 tablespoons 60ml Unsalted butter

  2. 1 tablespoon 15ml Onion - chopped (medium)

  3. 1 Garlic - minced

  4. 1/2 cup 55g / 1.9oz Diced celery

  5. 1 cup 237ml Water

  6. 1 cup 237ml Catsup

  7. 1 Diced red pepper

  8. 1/4 cup 59ml Fresh lime juice

  9. 2 tablespoons 30ml Cider vinegar

  10. 1 tablespoon 15ml Worcestershire sauce

  11. 1 Lime cut in half

  12. 1/2 teaspoon 2 1/2ml Ground cumin

  13. 1/4 teaspoon 1 1/3ml Chili powder

  14. 3 Tabasco sauce Salt to taste

  15. 1/4 cup 36g / 1 1/3oz Chopped fresh coriander

  1. Recipe Instructions Microwave butter, onion and garlic in a medium microwave safe bowl, covered with plastic wrap, on high power for 2 minutes. Stir in celery and microwave covered for 2 minutes. Stir in remaining ingredients except coriander until blended. Microwave covered for 7 minutes, stirring halfway through cooking. Puree sauce in a blender bowl or food processor. Transfer to bowl and stir in all but 1 tb coriander. Garnish with remaining coriander. Serve warm or at room temperature. Makes 2-1/2 cups.
