  1. 2 cups uncooked oatmeal (not instant)

  2. 1 1/2 tsp baking powder

  3. 1/2 tsp salt

  4. 1 cup fat-free skim milk

  5. 1/2 cup Egg Beaters or 2 eggs , beaten

  6. 1/2 cup unsweetened applesauce

  7. 1/4 cup sugar (I use just a pinch, you can always add sugar to the cooked version-- just sprinkle on top)

  8. 1 tsp vanilla extract

  9. 1 T. cinnamon

  10. 1 cup shredded carrots

  11. 1 small can of crushed pineapple , drained

  12. 1/4 cup raisins

  1. How to make it Combine wet ingredients. Add dry ingredients. Bake in sprayed 8"pan at 350 for 35-45 min. Let cool a bit and set-up before serving. Serve with milk or yogurt or alone.
