  1. Basil Bread

  2. 3 large ripe tomatoes

  3. 1 package cocktail rye bread slices

  4. 1 package shredded mozzarella cheese

  5. 2 tablespoons basil or to taste

  6. 2 tsp oregano

  7. 2 tsp fresh parsley

  8. Virgin olive oil

  9. Cube the tomatoes into tiny pieces, removing the stem and core of

  10. course. Mix the tomatoes, and all herbs into 1 bowl and set in

  11. the refrigerator.

  12. Place cocktail breads one by one on a large oven tray. Brush the

  13. olive oil over each piece. Take a tablespoon of the tomato mix

  14. and place it on top of the bread. Sprinkle the cheese on top of

  15. 15 to 20 minutes or until cheese has melted.

  16. Serve right away.

  17. You may also premake this appetizer and refrigerate until your

  18. guests arrive, and then you can pop it into the oven.
