  8. 1/2 pound cottage cheese, dry curd -- or farmer cheese

  9. 3 eggs

  10. 3 tablespoons matzo meal -- or wheat bran

  11. -- or wheat germ

  12. 1/2 teaspoon salt

  13. 2 tablespoons sugar -- optional

  14. Mix all ingredients together till smooth. Spray a non-stick griddle or skillet

  15. with vegetable cooking spray. Drop batter by large spoonfuls onto hot griddle.

  16. Cook till browned on bottom; turn over and cook the other side. - - - - - - - - - - - - - - - - - -

  17. Serving Ideas : Serve with sour cream, jelly or apple sauce.

  18. NOTES : To keep the fat and cholesterol down, you can substitute egg whites (2

  19. for 1) for all or part of the eggs.

  20. These taste a bit like blintzes. We like them without the sugar, but that's a

  21. matter of taste. (We don't like sweet blintzes either.)
