  1. 2 lbs 908g / 32oz Red snapper fillets

  2. 1/4 cup 15g / 1/2oz Grated onion

  3. 2 tablespoons 30ml Orange juice

  4. 2 tablespoons 30ml Lemon juice

  5. 2 teaspoons 10ml Grated orange rind

  6. 1/2 teaspoon 2 1/2ml Salt

  7. 1/8 teaspoon 0.6ml Nutmeg

  1. Thaw fillets if frozen. Cut fish into 6 portions. Place in a single layer, skin-side down, in a well-greased baking dish, 12 by 8 by 2 inches.

  2. Combine onion, orange and lemon juice, ornage rind, and salt. Pour over fish; cover and place in refrigerator to marinate 30 minutes.

  3. Sprinkle fish with nutmeg and pepper. Bake in a moderate oven, 350 degrees, for 25 to 30 minutes or until fish flakes easily when tested with fork.

  4. This recipe yields 6 servings; 3 carb grams per serving.
