  2. 4 boneless skinless chicken breasts (about 5 ounces each)

  3. all-purpose flour (for dredging)

  4. 2 large eggs

  5. 1 1/4 cups fresh breadcrumbs

  6. 1 1/3 cups finely grated aged Jack cheese or Parmesan cheese

  7. salt and freshly ground black pepper

  8. 6 tablespoons (3/4 stick) butter

  9. 3 tablespoons olive oil

  10. SALAD

  11. 2 tablespoons honey

  12. 2 tablespoons white wine vinegar

  13. 1 tablespoon Dijon mustard

  14. 1/4 cup extra-virgin olive oil

  15. 3 tablespoons finely chopped fresh chives

  16. 4 cups (lightly packed) fresh baby spinach leaves
