  1. 1 tablespoon(s) olive oil

  2. 1 bunch(es) green onions , trimmed and sliced crosswise

  3. 1 can(s) (14 1/2-ounce) reduced-sodium chicken broth

  4. 1 cup(s) water

  5. 1 cup(s) cut oats , (Irish oatmeal)

  6. 1/2 teaspoon(s) dried basil

  7. 1/2 teaspoon(s) salt

  8. 2 small zucchini , coarsely shredded

  9. 1 medium sweet red or yellow pepper , chopped

  1. In 2-quart saucepan, heat oil. Add onions and sautÉ until lightly browned. Stir in broth, water, oats, basil, and salt; heat to boiling over high heat. Reduce heat to low; cover and cook 20 minutes. Stir zucchini and pepper into oats mixture; cook 5 minutes or until all liquid is absorbed and oats are tender. Serve immediately.
