  1. 2 sheets puff pastry

  2. 2 potatoes

  3. 1 teaspoon frozen peas

  4. Pinch curry powder (any kind)

  5. 1 stem coriander/mint leaf, finely chopped

  1. Thaw the pastry sheets. Wash, peel and cut potatoes finely. Add this to microwave bowl along with some water and cook till soft.

  2. Drain the water and transfer this to a bowl.

  3. Microwave the frozen peas in water till tender, drain water later. Transfer this to a bowl.

  4. Add the herbs and spices (like coriander leaf, curry powder) and mix well.

  5. Cut the pastry sheets into snack size squares. Add small portions of spicy vegetable mix and cover this with the empty sheets and seal well by firmly pressing on the sides.

  6. Transfer these filled pastry onto a baking tray lined with non-stick baking paper.

  7. Cook in convection oven on medium (180 degrees), till golden brown and puffed.

  8. Turn these over and cook on the other side, at same temperature.

  9. Remove with caution and serve with tomato sauce.

  10. Enjoy!
